毕业于北海道大学医学系，在纽约洛克菲勒大学医学生物化学部等机构进修时，对作为糖尿病并发症的原因而备受关注的AGE进行了约5年的研究。在此期间，成功研发测定血液中AGE的方法，为世界首创。曾在《新英格兰医学杂志》《科学》《柳叶刀》等世界权威杂志发表AGE相关的学术论文。1996年就任北海道大学医学系讲师。2000年就任久留米大学医学院教授。2003年起，在东京银座开设“AGE牧田专科医院”，专门诊疗以糖尿病为主的生活习惯病、肥胖症等，已诊治病患达20多万人次。
著有《饮食术》《最强体质》等多部作品。

After graduating from the Department of Medicine at Hokkaido University and studying at the Department of Medical Biochemistry at Rockefeller University in New York, he studied AGE as a cause of diabetes complications for about five years.
